It’s that time of the year again y’all! This summer has just flown by and it’s already time to head back to school. Where has the time gone?? We’re capping off this summer by talking about one of our absolute favorite sweet treats: Thin Mints. We took everyone’s favorite Girl Scout cookie and made a delicious, creamy popsicle version, perfect for those hot August afternoons. These yummy pops would be a hit at any back-to-school gathering, or even just a nice sweet treat to enjoy with your kids after school.

Here’s your shopping list:
1 cup of 2% milk

½ cup of heavy cream

4 tbsp. powdered sugar

½ tsp. mint extract

8 – 10 thin Mint cookies…and maybe a couple of extras to snack on 😉

How to get your pops poppin’:
Combine the milk, cream, powdered sugar, and mint extract in a large mixing bowl with a spout. Stir until powdered sugar is completely dissolved.  Crumble Thin Mints into mixture, leaving some larger pieces according to taste.  Fill popsicle molds with mixture. Freeze at least 24 hours and serve!

How to get your posies pretty:
In this arrangement we used a mixture of yellow Asiatic lilies, orange marigolds, yellow tulips, Craspedia, Lysimachia, and Israeli ruscus.

1. Get wooden school pencils and hot glue them all the way around your vase.

2. Fill your vase with water.
3. Use floral tape to make a grid on the top of your vase in a tic-tac-toe formation.

4. Start with your greenery. Begin with 3 stems and arrange in the taped grid in triangle shape.  Then add 3 stems of each bloom in the same formation and voila!  Make this for a perfect teacher gift with a paper airplane note on top.
