Okay, we will admit it…chips, guac and queso should be added to our #sopostaples list because y’all, if we could indulge in Mexican everyday we would. So, you can bet your bottom dollar we will be toasting margs at dinner (and mayybbee lunch too) at our fav restaurants. To celebrate, we put together a few recipes to get your fiesta started! Starting off with our favorite cocktail…margaritas!

Watermelon Jalapeño Margarita

8 cups of watermelon

1.5 cups of tequila

1 cup triple sec

1 cup lime juice

1-2 jalapeños, thin and thick slices

1 lime

1/3 cup course salt

Recipe:

Cut watermelon into cubes and remove the seeds. In a blender, pulse watermelon until it becomes a liquid. Pour the liquid through a fine mesh strainer to get out any lumps. Slice thick pieces of one jalapeño and place a few in glass with the tequila. Muddle the jalapeños with the tequila and strain to get out any seeds. Mix together the watermelon juice, prepared jalapeño tequila, triple sec, and 1/2 a cup of lime juice in a pitcher and chill for at least 30 minutes up to an hour.

To prep:

Pour the other half of the lime juice (you can sub water for the lime juice) and the salt onto individual plates. Take any size glass you would like and dip the rim of the glass into the lime juice and immediately dip into the salt until the whole rim is covered. Fill the glass and feel free to add a few thinly sliced jalapeños or lime to the rim. Spicy Guacamole

3 avocados, peeled and pitted

half of a lemon or lime

1/2 cup red onion, diced

1/2 cup tomatos, diced

1/2 cup jalapeños

1/2 tsp cumin

1/2 tsp garlic powder

1/2 cup of cilantro (optional)

salt and pepper to taste

Recipe:

Cut avocados into halves and remove the pit. Spoon the avocado into a bowl and mash with a fork. Add the rest of the ingredients into the bowl, mix and add salt and pepper to taste.

Serve with chips or sub in plantain chips for a healthier option.

 

Pineapple Salsa

1 whole pineapple

2 cups pineapple, diced

1 cup orange bell pepper, diced

1 cup roma tomatoes, diced

1 cup red onion, diced

3 tablespoons of lime juice (about 2 limes)

1/2 bunch of cilantro, chopped (around 1/4 cup)

1/4 tsp of salt

Combine all ingredients together and refrigerate for at least an hour before serving to let all the flavors infuse together.

Serve with your fav chips!
